Macaroni and Cheese Cassarole

I have a weakness for mac & cheese. Whether it be from a box, or made from scratch. One of our favorite things to have at home is a macaroni and cheese cassarole. It's easy enough to make and just leaves you feeling stuffed and happy.

Here's what you'll need:
1 box or bag of elbow macaroni noodles
1 cup mild cheddar cheese
1/2 stick butter or margaine
1/2 cup milk
10-12 slices American cheese
1/4 cup bread crumbs
1/2 pack of bacon cooked and chopped
1/2 onion chopped and fried (optional)
1 small tomato diced (optional)

Preheat oven to 350º. Boil water and cook noodles as directed. While noodles are cooking, fry up bacon, and let bacon dry on a paper towel. When noodles are done, drain and add butter until melted. Mix in the cheeses until melted. Add milk and mix until creamy. Place contents into a 10"x13" baking dish and top with bread crumbs and chopped bacon. At this point you can add your fried onions and tomato if you choose to add them, but we never do because my husband doesn't like either in his mac, I on the other hand do, so I lose. Bake for 25 - 30 minutes. Let cool before serving.
